I created this recipe a few years back when I was doing a “Week of Queso” on my blog. In fact, I was so obsessed with queso at the time that I broke my own rule and posted the recipe before I’d ever tested it. And you know what? It turned out perfect that first time. And has been perfect ever since. No tweaking required.

I think part of my obsession with queso was that I hadn’t ever had it made with milk or cream before. I was always using the thicker stuff like American or monterey jack. And I was just tired of those versions. This queso is definitely not for the faint of heart. It’s creamy, cheesy, and just plain delicious. And if you want you can easily adjust the heat levels by adding more or less chili powder.

As promised, I went on to make this recipe multiple times during that week of queso. I think I made it every two or three days. I’d fix it for lunch or dinner or just for a little after dinner snack

Ingredients:

  • 1/2 cup (1 stick) unsalted butter
  • 1/4 cup all-purpose flour
  • 1/2 teaspoon kosher salt
  • 1/2 teaspoon ground cumin
  • 1/4 teaspoon cayenne pepper
  • 1/4 teaspoon paprika
  • 1/2 teaspoon chili powder
  • 1/2 teaspoon garlic powder
  • 1 cup half-and-half
  • 1 cup whole milk
  • 1 cup shredded cheddar cheese
  • 1/4 cup shredded pepper jack cheese
  • 1/4 cup chopped fresh cilantro (optional)
  • 1/2 cup chopped green onions (optional)
  • Tortilla chips
  • Salsa

Instructions:

  1. Melt butter in a medium saucepan over medium heat. Add flour, salt, cumin, cayenne, paprika, chili powder and garlic powder and cook, stirring constantly, for 1 minute.
  2. Add half-and-half, milk, cheddar and pepper jack cheeses and stir until cheeses are melted.
  3. Reduce heat to low and simmer for about 5 minutes, stirring often.
  4. Remove from heat and stir in cilantro and green onions (if using).
  5. Serve with tortilla chips and salsa.
