Perfect for any dinner party, Christmas, or just a nice family meal, this Freshly Pounded Poultry With Garlic Dipping Sauce is a great dish for dinner. You can even have a side of Baked Potato that goes great!
Ingredients:

1 whole chicken (3-4 pounds)

1/2 cup butter, melted

1/2 cup olive oil

1/2 cup lemon juice

2 garlic cloves, minced

1/4 teaspoon red pepper flakes

1/2 teaspoon salt

1/2 teaspoon pepper
-
1/2 teaspoon fresh thyme

1/2 teaspoon fresh oregano
-
1/2 teaspoon fresh basil
Instructions:

Preheat oven to 400 degrees F.

Rinse and dry chicken.

Place chicken breast side up in a large roasting pan.

Combine melted butter, olive oil, lemon juice, garlic, red pepper flakes, salt, pepper, thyme, oregano, and basil in a small bowl.

Brush the chicken with the butter mixture and place in the oven.

Roast the chicken for 1 hour.

Remove from the oven and baste with the butter mixture.

Roast for an additional 20-30 minutes or until the internal temperature of the chicken reaches 165 degrees F.

Remove the chicken from the oven and allow to rest for 10 minutes before carving.

Serve with garlic dipping sauce.
