Peach Covered Peaches

Everyone’s favorite, fresh Georgia peaches are available at this time of year, and so the Peach Covered Peaches recipe has been updated for the season. If you want to make a great dinner for a crowd, these are perfect. You can make this ahead and just pop them in the oven when you’re ready to eat. Sometimes when we have a really busy week and I want to serve dinner to the family (because I am super mom and that’s what I do), I make these ahead of time and have them ready when we want to eat. Dinner is served!

These are SO good. The sugared peaches caramelize beautifully, and the sauce is a total bonus for a sweet treat. Literally, these are to die for.

Ingredients

  • 4 peaches

  • 1/2 cup (100g) granulated sugar

  • 1/2 cup (100g) brown sugar

  • 1/2 cup (100g) white sugar

  • 1/2 cup (100g) butter

  • 1/2 cup (100g) shortening

  • 1 teaspoon vanilla extract

  • 1 teaspoon almond extract

  • 1/2 teaspoon salt

  • 1/2 cup (100g) flour

  • 1/2 cup (100g) rolled oats

  • 1/2 cup (100g) chopped pecans

  • 1/2 cup (100g) chopped walnuts

  • 1/2 cup (100g) chocolate chips

  • 1/2 cup (100g) butterscotch chips

  • 1/2 cup (100g) white chocolate chips

  • 1/2 cup (100g) dried cranberries

  • 1/2 cup (100g) dried blueberries

  • 1/2 cup (100g) dried cherries

  • 1/2 cup (100g) dried raspberries

  • 1/2 cup (100g) dried strawberries

  • 1/2 cup (100g) dried apricots

  • 1/2 cup (100g) dried pineapple

  • 1/2 cup (100g) dried papaya

  • 1/2 cup (100g) dried peaches

Instructions:

  1. Wash and cut peaches into halves. Remove pit and place in a large bowl.

  2. In a medium sized saucepan, combine sugars, butter, shortening, vanilla extract, almond extract and salt. Heat over medium heat until melted and well combined. Remove from heat.

  3. Add flour and stir until well combined. Add oats, nuts, chocolate chips, butterscotch chips, white chocolate chips, dried fruit and mix well.

  4. Pour mixture over peaches and stir until well combined.

  5. Pour mixture into a 9x13” baking dish.

  6. Bake at 350°F (180°C) for 25-30 minutes or until top is golden brown.

  7. Cool and cut into squares.
