Ingredients

1 cup (2 sticks) unsalted butter, room temperature

1 cup granulated sugar

2 large eggs

1 teaspoon pure vanilla extract

2 1/2 cups all-purpose flour

1/4 teaspoon salt

1/2 cup freshly squeezed lime juice (about 4 limes)

1/2 cup freshly squeezed lemon juice (about 2 lemons)

1/2 cup confectioners' sugar

1/2 teaspoon pure vanilla extract

1/2 teaspoon finely grated lime zest

1/2 teaspoon finely grated lemon zest

1/2 cup fresh raspberries
Instructions

Preheat oven to 350°F (180°C). Line an 8x8-inch baking pan with parchment paper or grease well.

In a large bowl, beat butter and sugar until creamy. Add in eggs and vanilla extract and mix until well combined. Add in flour and salt and mix until just combined.

Pour in lime and lemon juice and mix until just combined. Pour batter into prepared pan and spread evenly.

Bake for 30-35 minutes until golden brown and a toothpick inserted into the center comes out clean.

Remove from oven and allow to cool completely.

In a small bowl, whisk together confectioners' sugar, vanilla extract, lime zest and lemon zest.

Cut cooled bars into squares and dip into icing. Top with fresh raspberries.

Allow icing to set before serving.
